Spinach & Ricotta Eggplant Rollatini

Tomato and Veggie( or pasta Roll ups~use sliced veggie in place of the pasta for a healthy version. Either way ,a roll up is an easy way to control portion sizes!

    • 12 oz Spinach package, frozen

    • 1 Egg

  • Condiments

    • 1 jar Tomato sauce

  • Baking & Spices

    • 1 Kosher salt

    • 1 Pepper

    • 1 pinch Red pepper flakes

  • Dairy

    • 2 cup Mozzarella cheese

    • 1/4 cup Parmesan cheese, grated

    • 15 oz Ricotta cheese, part skim
